Is it fine for a maid of honor to do the wedding toast in memory of deceased grandpa of bride, being her best friend?

My best friend is getting married soon, and I am supposed to take care of the ceremonies that take place, as she doesn’t have any siblings. However, her grandpa has died recently, so I was thinking of dedicating a wedding toast for him. Nonetheless, since I am not really a family member, I am a bit apprehensive of the speech in lieu of the wedding toast for him. Although, her family knows me well, and her grandpa also did, but I am still not sure if I should go for it or not! I would like to know from some wedding expert whether I should indeed present a wedding toast for him being the maid of honor, or let her do it at her wedding! Any ideas?
